ホーキーポーキーは、ニュージーランド定番の有名なアイスクリームフレイバーです。
砂糖や蜂蜜を火にかけ、ベーキングパウダー加えた後、飴状になるまで練り、この飴状のモノがホーキーポーキーで、コレをバニラやミルクの
アイスクリームに混ぜ込んだのがホーキーポーキーアイスクリームだそう。
ホーキーポーキー／ＨＯＫＥＹ－ＰＯＫＥＹ名称の由来
ニュージーランドアイスクリーム製造協会によると、キャラメルベースのアイスクリームに砂糖、水飴、バター、ゼラチンを主成分とするキャラメル粒を混ぜ込んだアイスクリームを「Hokey Pokey ホーキーポーキー」と呼んでる。「Hokey Pokey」は、19世紀から20世紀前～中期にニューヨークやイギリスを含むいくつかの国において、一般的にアイスクリームを表す俗語でつかわれ、特に、露天商人によって販売されたアイスクリームを表していた。露店商人（ほとんどがイタリア出身者と言われている）は、「Hokey Pokey」というフレーズを用いた売込みや歌を使用していた。
だそうです。笑
とりあえず、とても美味しそうですが、日本ではなかなか見かけないアイスですね。
今度、作り方を調べて作ってみたいと思います。
